Sub-Saharan Africa grapples with many public health issues such as food insecurity, increased prevalence of infectious diseases, limited access to clean water supply, poor nutrition and lack of improved health services for its populace (IMF, 2021). Of all these challenges, the inaccessibility of clean water supply for both the rural and urban populace is the most pressing challenge, which has been exacerbated by extensive pollution and climate change crises. The issue of water access and supply affects both rural and urban populations. At rural areas water is accessed in yard taps and in arid regions through water kiosks managed by private owners. Among the urban poor, water access is compromised by poor supply infrastructure especially among informal settlers and risks such as contamination during the supply chain are imminent This book therefore seeks to close this knowledge gap by 1) generating a water resources inventory for Sub-Saharan Africaregion, 2) exploring the water crises in both its urban and rural settings, 3) understanding the causatives of the crises and 4) suggesting viable solutions to manage the water challenges using named case studies. The aim is to improve understanding on the region¿s water problems and advise scholars and policymakers on priority research areas and action plans to better water management for sustainable development.
This volume discusses the nutraceutical importance, production technologies, management and cultivation practices of underutilized vegetables, which can be described as those vegetable crops which are neither grown commercially on a large scale nor traded widely. While much of the crops addressed in the book are cultivated, traded and consumed at the local level, there are over 60 species of minor vegetables with high growth and yield potentials that are not cultivated to a large extent for greater populations. This work highlights the production technologies needed to grow these vegetables on a larger scale and under various adverse soil and climatic conditions, and their nutritional and medical benefits to assist with food security, health and poverty alleviation in rural areas. Production of underutilized vegetables is low, due to the unavailability of planting material, lack of awareness about the nutritional and medicinal importance among the farmers and inadequateinformation on the production techniques of these crops. In this context, there is an urgent need to take up a program on genetic resources exploration, management, utilization, and improvement of underutilized vegetable crops to ensure food and nutritional security. Readers will learn about these technologies and practices, while also learning about the unique properties and benefits of these underutilized vegetables. The book will be useful for academicians and researchers focusing on vegetable production and breeding, as well as farmers and sustainability scientists looking for underexplored sources of nutrition to benefit large rural populations.

Bambara groundnut (Vigna subterranea) is a crop native to the Bambara tribe of Mali and is grown as a subsistence crop in Africa. Recent advances in research, however, have brought the crop to the forefront of the sustainable agriculture movement.The Bambara plant is highly drought tolerant and rich in protein and carbohydrates, including starch. These macromolecules have enormous industrial potentials. For example, the starch in Bambara grain has been found to exhibit higher (double) viscosity than conventional corn starch. Modified Bambara groundnut starch has been used to produce edible bioplastics that could be upgraded industrially to suit the fourth industrial revolution shift.Bambara plants are also a natural source of soluble fiber, which is gluten-, lactose- and cholesterol-free, with potential as a stabiliser, thickener and gelling agent as well as a cryoprotectant in frozen products. The health benefits include lowering of cholesterol levels, levelling of blood glucose and as a detoxing aid. Master's Thesis from the year 2017 in the subject Biology - Diseases, Health, Nutrition, grade: 3.95, Bahir Dar University (Bahirdar Institute of Technology), course: Applied Human Nutrition, language: English, abstract: Properly designed and evidence-based dietary guidelines make it easier for people to adopt healthy eating and lifestyle patterns that would promote their overall health and decrease their risk of acquiring diet-related chronic diseases (DRCDs). However, Ethiopia currently lacks this important public health tool. This study seeks to propose key diet and physical activity recommendations through soliciting experts¿ perspectives and critical review of relevant documents.A qualitative study was conducted in Addis Ababa city among key informants. Experts from eight organizations and institutions having interest in nutrition and health issues were purposively selected. Using a topic guide, data were generated through face-to-face in depth interviews with 10 experts. The interviews were audio-recorded, transcribed and thematic analysis was performed. To complement with the interview of key informants, reviews of selected global as well as national documents were carried out, and the data generated thereof were summarized.Diet and health are closely related and nutrient deficiencies, diet¿related chronic diseases as well as their risk factors are rampant, while food security remains a concern. Diet and nutrition literacy is said to be low, in Ethiopia. World-wide, about one-third of countries (five in Africa) have dietary guidelines, whose core messages are reasonably similar. Cognizant of the prevailing situation, some national strategic documents and interviewed experts are in favor of placement of dietary guidelines.The dietary habits and lifestyles of the populace are sub-optimal and they need to be improved timely through multi-sectorial efforts that include nutrition information and education, based on appropriate dietary guidelines.
