In recent years, the use of probiotics in the field of health is increasing for a multitude of benefits. These microorganisms are very sensitive to environmental conditions, so we propose the design of microparticles that protect them, establishing the appropriate concentration of calcium cation in order to ensure maximum viability of the probiotic microorganism Lactobacillus gasseri CECT5714.
Probiotic microorganisms are very sensitive to environmental conditions and to the physical and chemical procedures necessary to formulate them in different pharmaceutical forms. The aim of this work is to find a suitable method of preservation of probiotic microorganisms once microencapsulated. For this purpose, different freeze-drying procedures are proposed and it is studied how they affect the survival of probiotics once microencapsulated and the characteristics of the microparticles.
