In many parts of the world, the use of antibiotics in food-producing animals is partially or completely banned. This has led to increased research to develop alternatives to antibiotic growth promoters (AGPs). Some of these alternatives include prebiotics, probiotics, and phytoadditives. This book focuses on probiotics, which are the most feasible option to replace AGPs because they directly modulate the gut microbiota and improve gut absorption, which ultimately accelerates growth and production. The book provides recent updates on the use of probiotics in farm animals including poultry, fish, and ruminants as well as pet animals.

This book examines how the developments in veterinary science, philosophy, economics and law converged during the nineteenth and early twentieth centuries to entrench farm animals along a commodification pathway. It covers two neglected areas of study; the importance of international veterinary conferences to domestic regimes and the influence of early global treaties that dealt with animal health on domestic quarantine measures. The author concludes by arguing that society needs to reconsider its understanding and the place of the welfare paradigm in animal production systems. As it presently stands, this paradigm can be used to justify almost any self-serving reason to abrogate ethical principles. The topic of this book will appeal to a wide readership; not only scholars, students and educators but also people involved in animal production, interested parties and experts in the animal welfare and animal rights sector, as well as policy-makers and regulators, who will find this work informative and thought-provoking.

Milk, a highly nutritious food is an important source of high quality proteins and most of the essential vitamins and minerals required by the human body. Due to the lack of cold chain system and convenience associated with the use of milk in the traditional sweet products, good amount of the milk produced in the country are utilised for the same. Recently, there has been an increasing concern for health among the consumers leading to the increase demand for healthy foods. The snack foods available in the market are mainly prepared from starch rich foods and cereals grains especially potato and corn and have low nutritional density and high calorie and/or fat. The book provides the right formulation and processing conditions to develop low fat milk rings with high nutritional value, how it can be stored for longer period of time without refrigeration and how to estimate the production cost of the developed product.

The intensification of livestock systems is normally accompanied by the use of chemical nitrogen fertilizers, but these can be substituted by the nitrogen biologically fixed by leguminous plants associated with existing grasses in the pasture, which can lead to an increase in biomass production. Traditionally, animal production systems in the Mexican tropics are based on the use of native forage species of low productivity. However, when the intention is to intensify animal production, introduced forage species are used, both grasses and legumes; but in the case of the latter, their permanence in the field is short, that is why the use of Arachis pintoi; associated with grasses; has been noted for its persistence under grazing, but its survival mechanisms are not fully understood to date, so this study aims to provide a minimum part of the basic knowledge of these mechanisms, in order to improve the management of these species under the conditions of the Mexican humid tropics. This would allow the sustainability of dual-purpose cattle raising.
