As such, it provides an overview of the origins of local cuisine and the influences that ethnic groups have had on food customs in Minas Gerais, especially in the city of Passos and the surrounding region. It then identifies local ingredients and typical recipes, and notes that some food habits have fallen into disuse, but others still persist in the daily lives of traditional families.
