    Um, this book is changing my life. Full disclosure: I'm not a 100% committed vegan. This book, however, has amazing recipes and really guides you through concepts in addition to recipes. The discovery of aquafaba is amazing to me. An otherwise complete waste of throwing out chickpea liquid can become all sorts of great additions to your dishes (in baking, used to make vegan mayo, etc.). Also, the ultimate veggie burger recipe in here is definitely a fan favorite. Even if you are not a committed vegan I would recommend this book because it's a great way to have a more plant based diet which is healthier, cuts down on cost, and really is quite simple once you learn some of these recipes!
