You'll love our galette Bretonne, a savory buckwheat crêpe with ham, egg, and cheese from Brittany, a classic and creamy quiche Lorraine from the northwest, our version of the famous Salade Niçoise (plus a bonus vegetarian version) from Provence, and Basque chicken from the spicy southwest of France, among many others. Going beyond alluring meals that capture the spirit of French cuisine, we've also included several recipes for the essential breads, condiments, seasonings, and sauces. With these, and a bonus chapter on easy French side dishes, you can give any meal a French flair! Our goal was to create recipes that honor the traditions of French cuisine while allowing for variations in ingredients that are easier to find where you live. We also wrote a useful guide to French ingredients, and provided many fun snippets of the history behind the recipes. The best part? A portion of the proceeds from this book serve as a fundraiser for the French students at Roosevelt High School in Minneapolis, MN for their exchange program to France. We needed a boost for our own child's trip and realized with this cookbook, we could also help other students fund their important adventure to build bridges and gain valuable experiences in world travel with the benefit of an exchange program.
