Nutrition plays a fundamental role in the maintenance and improvement of human health.It is a tremendously broad discipline, with different fields of application. This work is composed of 5 chapters, which include current bibliographic reviews, culinary elaborations with their corresponding nutritional analysis from a scientific perspective and the design of a nutritional education project.All this material will be useful to train health professionals in nutrition and to achieve a broader vision in their role as health agents.
