THE NEW YORK TIMES BESTSELLER AS SEEN ON THE HIT TV SHOW 'THE BEAR'Essential lessons in hospitality for every business, from the former co-owner of legendary restaurant Eleven Madison Park. Will Guidara was twenty-six when he took the helm of Eleven Madison Park, a struggling New York City two-star brasserie that had never quite lived up to its majestic room. Eleven years later, EMP was named the best restaurant in the world. How did Guidara pull off this unprecedented transformation? Radical reinvention, a true partnership between the kitchen and the dining room-and memorable, over-the-top, bespoke hospitality. Guidara's team surprised a family who had never seen snow with a magical sledding trip to Central Park after their dinner; they filled a private dining room with sand, complete with mai-tais and beach chairs, to console a couple with a cancelled vacation. And his hospitality extended beyond those dining at the restaurant to his own team, who learned to deliver praise and criticism with intention; why the answer to some of the most pernicious business dilemmas is to give more-not less; and the magic that can happen when a busser starts thinking like an owner.Today, every business can choose to be a hospitality business-and we can all transform ordinary transactions into extraordinary experiences. Featuring sparkling stories of his journey through restaurants, with the industry's most famous players like Daniel Boulud and Danny Meyer, Guidara urges us all to find the magic in what we do-for ourselves, the people we work with, and the people we serve.

This edited collection brings together interventions on the geographies of tourism in pandemic times approached from a biopolitical perspective. Whilst the ¿management of bodies¿ has always been a constitutive part of tourism and its spatialities, the COVID-19 pandemic has prompted the emergence of entirely new ¿states of exception¿ and emergency regimes, geared towards tight restrictions and control over the mobility and embodied practices of millions of travelers and tourists. Debates in tourism over the ¿politics of life¿, now more than ever, ought to concern health and wellbeing for both individuals and selected populations, not in the least because tourism has provided in many instances the socio-spatial conditions for the virus to spread. This book intends to show how a biopolitical analytical framework may provide a set of insights and critical perspectives that are key to the understanding of contemporary tourism practices and regimes of mobility, security, and in/exclusion ¿ particularly in relation to the COVID-19 pandemic.
This edited volume extends current voluntourism theorizing by critically examining the intersections among various forms of work-leisure travel and language learning/teaching. The book¿s contributors investigate volunteer tourism and its cognates such as working holidaymaking, international internships, and gap year labor, as discursive fields in which powerful ideas about language(s), their speakers, and pedagogical practices are propagated worldwide. The various authors¿ chapters shed light on the hegemony of global English, the social consequences of linguistic commodification and neoliberal rationalities, the ways in which speaker identity positions can alter the exchange value of languages, and how language competencies are tied to power in the labor market, among related topics. This volume will be of interest to readers in Applied Linguistics, Critical Sociolinguistics, Educational and Linguistic Anthropology, Tourism and Leisure Studies, Migration and Mobility Studies, and Language Teaching and Learning.
This book provides a detailed account of the global hotel industry with a focus on managerial work and people management. A comprehensive understanding of the managers' work from a people management perspective is essential to the success of hotel operations; however, this is an area that has been under-researched.Based on existing literature and extensive research carried out by the authors over fifteen years, the book explores the different aspects of managerial work in global hotel industry settings and covers topics such as general management, leadership, education and training, skills and competencies, crisis management, and managing diversity. The book¿s findings suggest that hotel managers should adopt a people-centric management and leadership style while at the same time maintaining operational efficiency.A unique book in terms of scale and depth, it offers useful insights into both theoretical and practical perspectives.
This edited collection explores the pivotal role of the hotel industry in building Western Europe¿s tourism economy during the 20th century. The book brings together ten contributions focused on the same period, 1900-1970, to offer comparative perspectives from across the region including Italy, Switzerland, France, Spain and Britain. Drawing on historical case studies, chapters illuminate the different factors linking hotels and the broader tourism system including interventions of the public authorities and the State, the importance of private involvement, commercial strategies, the medium-term development of private hotels, hotel entrepreneurship, and the impact of economic crises and wars. By placing differing national approaches taken to the growth of the hotel industry in comparison, the book aims to fill a gap in the historiography of European hospitality and shed light on the wider impact of hotels and tourism on economic development at both a national and regional level. It will be of interest to a range of scholars, including in economic and business history, tourism studies, the history of tourism management, and social history.
This book is an assemblage of diverse yet homogenous research papers that bring together the issues and challenges of cultural heritage conservation and tourism sustainability. The richness of this book stems from its inclusion of diverse case studies from around the globe while scrutinizing the cases of both deterioration and sustainability of cultural heritage belonging to different eras. This book sheds light on the connections between culture as an essential dimension of local sustainability and cultural dimensions of sustainable tourism, further contributing to the complex discussion between culture and tourism. This book gives an overview of current research and subjects of discussion that focuses on cultural sustainable tourism through several sections, such as planning and management of sustainable tourism, sustainable cultural tourism development in a digital era, social and economic impacts of cultural tourism, and sustainable tourism development in urban areas
This book addresses a growing demand to hear the authentic voices and understand the lived tourist experiences of people with disability. The latest volume in The Tourist Experience series challenges what is arguably an exclusionary, marginalising, discriminatory, and ableist (tourism) world. By drawing attention to the 'dis/' in 'disabled', the authors provoke the need to change binary thinking about people who live with disability so that they may be 'able' to assume the role of tourist. They engage critical tourism and critical disability studies, and their respective theories, perspectives, and debates, around, for instance, models of disability that shape conceptualisations and worldviews, inclusive research and enabling language, and the ethics of care. These are pivotal to dismantling normative structures to enable a more inclusive, equitable, and socially just tourist experience that promotes a more independent and dignified tourism world for people with disability.
Club Red is a sweeping and insightful history of Soviet vacationing and tourism from the Revolution through perestroika, part of the regime's effort to transform the poor and often illiterate citizenry into new Soviet men and women. Koenker emphasizes the development over time of a distinctive blend of purpose and pleasure in Soviet vacation policy and practice, and she explores a fundamental paradox: a state committed to the idea of the collective found itself promoting a vacation policy that increasingly encouraged individual autonomy. While Koenker focuses primarily on Soviet domestic vacation travel, she also notes the decisive impact of travel abroad (mostly to other socialist countries), which shaped new worldviews, created new consumer desires, and transformed Soviet vacation practices.

This book explores the intersection of gender and disability in the context of tourism. In part, the book foregrounds feminist theorising of intersectionality by examining how gender can overlap with other social identities to contribute to more systemic oppression, domination, discrimination, and marginalisation of certain categories of people. Our point of departure is that disability does not operate in isolation as it is constituted and experienced within an already gendered social and tourism environment. With substantial research on the intersection of gender and tourism on the one hand, and the intersection of disability and tourism on the other hand, the interconnectedness of gender and disability and the implications this has on tourism policy and practice remains understudied. Thus, the book provides a critical lens that helps unpack underlying assumptions about gender and disability while questioning the dominant ideas about gender and disability reproduced through tourism policies and institutional practices in an African context. This book will be of interest to scholars and researchers in Gender Studies, Disability Studies, and Tourism Studies, particularly those with a research interest in Africa.
